創業以来26年間、変わらぬ美味しさを提供し愛され続けている、ステーキとハンバーグ専門店「牛亭」。札幌市民には馴染み深い中山ミシン横の階段を登ると、木枠の扉の向こうに店内が覗いて見える。Since they had opened, “Ushitei”, a Stake and Hamburger restaurant has been always loved for 26 years for offering us fadeless taste. Next to well-known ( for Sapporo citizen ) Nakayama sawing machine store, 店内は全体的に落ち着いた印象で、クラシック音楽が静かに流れている。店内に入った瞬間にほんの少し感じる緊張感が、心地良い。
人気メニューである牛100％のハンバーグは焼き加減を選択できる。おすすめはレアやミディアム。とろける様な食感のハンバーグと、ガーリックやペッパーの効いたソースの絶妙な絡み具合は、今まで口にしてきた「ハンバーグ」の概念を覆すほどである。生でも食せる程の新鮮な牛肉を使用しているからこそ、実現できる味なのだろう。
サラダやライス、ドリンク等が付いたセットメニューもあるので、味、ボリューム共に十分な満足感がある。
自慢の本州産黒毛和牛のステーキもランチ、ディナー共に注文可能なので、特別な日のランチや大事な人とのディナーに如何だろうか。
本店の他に琴似店（札幌市西区琴似4条1丁目1-1コルテナー1F）とサッポロファクトリー店（札幌市中央区北2条東4丁目サッポロァクトリー3条館アトリウム1F）があり、各店舗により若干メニューが異なるが、ハンバーグは全店共通で扱っている。長年愛され続ける理由を、ぜひ直接確かめていただきたい。

Text by Marie Kawasujigo up the stairs and you will find a wooden flamed door and the inside of the restaurant is slightly can be seen through from the outside.
With the silent classic music, the interior is more chic and nifty. Yet they have good tense atmosphere slightly when we enter the restaurant, this gives us a hunch of a good start of having a great dish.
One of the popular menus, you can choose how you would like the 100% beef hamburger cooked. Rare or medium are my favorite. The combination of melting texture of the hamburger and the garlic flavored pepper sauce will reverse your general idea of “hamburger” which you used to eat. The meat they use is eatable even it is row, which means surprisingly fresh, that must be the secret of the unforgettable taste which you have never had.
They also have set menu, hamburger with salad, rice, and drink. Taste and volume is perfect, how can we be satisfied more? Their recommendation of Kuroge Wagyu(a kind of black cow from Honshu) can be ordered in lunch and dinner time, how about trying it on your special day or dinner with a special person?
There are also branches in Kotoni (Korutener 1F Kotoni4jou 1choume 1-1 Nishiku Sapporo), and in Sapporo Factory (Sapporo Factory 3joukan Atrium 1F Kita2jou Higasi4choume Chuouku Sapporo). They have slightly different menu in each branches, but the hamburger can be ordered in every branches. The reason why they have been loved for such a long time, you will find it when you put the piece of the melting meat into your mouth.
Reservation is recommendable when you go with group.
