Emerging from Melbourne’s abundant dining scene, The Aylesbury manages to tick all boxes in the culinary world. An elegantly ambitious restaurant located in the heart of the city from husband and wife owner-duo Jesse and Vanessa Gernerメルボルンの数えきれないレストランシーンにおいても、「エイルズベリ」は、“誰ものチェックリストに入る台所” と言えそうだ。街の中心部に堂々と位置する洗練された店構えは、すでにフィッツロイにスペイン料理店「アナダ」をオープンさせ、成功を収めているオーナー夫妻であるジェシー＆ヴァネッサ・ガーナーの意欲を物語っており、それでなくとも美しい眺めに加えて、５階にはチャイナタウン等、北部を一望できる屋上スペースを配し、極上の景色を楽しめる。
スペイン料理にインスピレーションを受けながらも、エイルズベリを特別な存在にさせるのは、なんといっても、そのユニークなメニューであろう。大皿を彩るタパスは、厳選されたオーガニックな地元の食材のみを使用し、シェフ腕よりの季節料理も時には遠く離れた地域でのみ栽培する珍しいものが使われることも。
店内を包む豊かでエキゾチックな香りは薫製から塩づけ、乾燥まで全てを自家製で行うことで生まれるこだわりの賜物。使用されるハチミツまでもが、ガーナー夫妻の住居から程近い、お手製の蜂巣箱より採取されたもの、という徹底ぶりだ。カジュアルな趣でありながらもクオリティは一切犠牲にされず、新鮮なもの、環境に配慮したものを提供するシンプルな理念から創りだされる料理はどれも非の打ち所のない、素晴らしいものばかりだ。

Translation: Andry Adolphe. This is their second gastronomical venture after their first success, Andalusian-inspired Anada situated in Fitzroy. An addition to the landscape is the rooftop located on the fifth level of the building, showcasing a panoramic view of Chinatown and the Northern district.
Ensuring they are a step above the rest, the Aylesbury menu is a notably unique Spanish-influenced combination of tapas and larger share plates. Completely serving a conscious selection of organic and locally-sourced ingredients, the chefs create seasonal delights from regional produce with some coming as close as 4km away growing heritage, pest-free and hard to find produce.
The exotic aromas fill the space, an ode to their hands-on approach with initiative produce all smoked, baked and cured in-house. Their honey is even from two self-made beehives located above Anada, and at the couples own home nearby. Although there is an emphasis on casual yet quality dining, the standard is impeccable and the innovation is unmatched for such simplicity in serving fresh, sustainable produce.
