Dashi, one of the best places to eat Sushi in Buenos Aires, opened at the end of the year 2000. The idea was textile engineer Jorge Szwarcberg’s, who for the last 10 years has been the head of this projectブエノスアイレスで寿司を食するなら、特にお勧めなレストランの一つである「ダシ」。開店したのは2000年末、繊維工学者ホルヘ・シュワルクベルグの提案から始まった。彼は過去10年間「ダシ」を現実の形にするため、先頭に立ち計画を進めてきた。
現在ではブエノスアイレスの都市部に６店舗を構え、更に近々他の地方にも支店を増やす予定だという「ダシ」。その魅力は何と言っても、具材の組み合わせ-美味い寿司が本来与えてくれる喜び-にある。
まず味わって欲しいのが、クリームチーズとアボカドのサーモンロール、その名も「サムライ」。お次は、「オセアノ・デ・マリスコス(海産物の大海原)」。これは煮詰めたシャルドネを使った白ワインと一緒に車海老・小振りのイカ・スペイン産のタコ・ムール貝を煮込んだもの。そこへ更にカレーソースがかかり、オリーブオイルが香る黒米を合わせている。外国人の目を引くであろう寿司の船盛もおすすめだ。
デザートには「モンテ・フジ」。山の形に作られたスイスチョコレートの中にはチョコレートムースが詰まっており、周りには苺やアイスクリームが散りばめられている。
このレストランのモットーについて尋ねると『だしとは日本語で“うまみ”を意味します。これこそ私達がやってみようと思ったこと、喜びを感じながらも経験していけることなんです。そこには東洋の精神とブエノスアイレスで生まれ育った者としての心が宿っています』という言葉が返ってきた。
是非、自分自身の舌で味わって欲しい。文化の融合こそが「ダシ」に特別な魅力を与えてくれるものなのである。

Nowadays, there are 6 Dashi branches in the key areas of Buenos Aires and the opening of branches in the interior of the country is imminent. What renders Dashi special lies in the mixture of ingredients in the right amounts, the classic delight of good sushi.
A meal at Dashi may start with ‘Samurai’, delicious salmon, Philadelphia and avocado snacks. After that, try ‘Océano de Mariscos’ (Seafood Ocean) made of king prawns, small cuttlefish, Spanish octopus, and mussels cooked in a reduction of Chardonnay white wine with a soft English curry sauce, garnished with black rice with olive oil, or ‘el barco’ (the boat) — a tray in the shape of a wooden boat with different varieties of sushi, which is as tasty a dish as it is eye-catching. For dessert, we recommend ‘Monte Fuji’ (Mount Fuji): a pyramid of Swiss chocolate filled with chocolate mousse surrounded by berries and cream ice-cream.
The motto of the restaurant is: ‘Dashi means “taste” in Japanese. Therefore, this is what we have chosen to do, things to taste and with pleasure, with an eastern spirit and a Porteño heart.’ See this for yourself — the fusion of cultures makes Dashi a new great experience for the diner.
