アンドレ・ポーセルが、美食への情熱を抱くようになったのはなんと12才。弟に料理をつくってあげたとき、料理によって喜びや幸せを引き出せると感じられたことがきっかけだった。そのときに抱いた情熱の延長線上に「チラ」はある。
この店の料理は、フランス料理にインスパイアされていてかつ特徴的だ。『私たちが料理をうみだす際には、独創的な１品になるようにすべての情熱とクリエイティビティを注ぎます』とオーナーのアンドレは語っている。
前菜には、チュブト州産の新鮮な牡蠣、トリュフクリーム、温泉卵、コニャック漬のエシャロットや、血のソーセージなどが理想的だ。メインディッシュには、シャトーブリアン（サーロイン）を、キノアリゾットやスブリンツチーズ、ベーコン、ポルトベロマッシュルーム、さやいんげんピューレと一緒に。もしくは、ウサギ肉と干しきのこのラビオリスープや、タラとマッシュブロッコリー、小イカの“船乗りの”ムース添えが、あなたをうっとりさせてくれるだろう。食事の最後には、デザートがベスト。クリームチーズのアイスクリームやイナゴ豆の砂糖漬け、ウィスキークリームと共にたのしむヘーゼルナッツクリーム。ホワイト、ミルク、ビター、ココアなど種類豊富なチョコレートもおすすめ。「チラ」のワインセラーは素晴らしく、国中から集められた250種ものワインが適度な温度、湿度で保管されている。
「チラ」はまさに味覚の天国だ。ぜひすべての人にためしてほしい。

Andrés Porcel discovered his passion for gastronomy at the age of 12, when he cooked for his brother and saw the pleasure and happiness he was able to bring about with his work. Chila is the result of the passion Andrés discovered back then.
The cuisine here has been defined as signature, with French inspiration. ‘When we develop a dish, we do so thinking it will be unique and we devote all our passion and creativity to the task,’ the owner says.
To start your meal, fresh oysters from Chubut or truffle cream, 61° egg, shallots in cognac and blood sausage dices, are ideal. To continue, as a main dish, Chateubriant (tenderloin) with quinoa risotto and Sbrinz cheese, bacon, Portobello and green beans puree; rabbit, dry-mushroom and cooking-stock ravioli; or pollack, mashed broccoli, hot baby squids, and ‘sailor’ foam, will leave you in ecstasy. To round up the meal, the best choice is a dessert such as the hazelnut creamy, with cream cheese ice-cream, candied carob and whiskey cream; or the variety of chocolates, which includes the varieties white, milk, 80% dark and cocoa. Chila’s wine cellar is excellent, there are 250 labels of wines from every area in our country, each stored at the appropriate temperature and humidity.
Chila is doubtless a haven for our sense of taste that everyone should experiment.
